Food, Soil, and Nourishing Life
Modern food is abundant. In many ways, this is a remarkable achievement. Grocery stores offer fruits and vegetables year-round, chicken is inexpensive, beef is widely available, and foods from around the world can be shipped across long distances. From one point of view, this is progress.
But from a yangsheng perspective, abundance is not the same as nourishment.
Yǎngshēng (養生), often translated as “nourishing life,” asks us to look at health as relationship. Food is not only a collection of calories, vitamins, minerals, protein, and fat. It is also connected to soil, season, climate, freshness, farming methods, animal life, cooking, digestion, and the condition of the person who eats it.
Modern nutrition often focuses on what can be measured. This is valuable. We need to know about protein, fiber, blood sugar, sodium, cholesterol, vitamins, and minerals. But Chinese medicine traditionally asks another question: How does this food relate to the body, the season, and the larger pattern of life?
This question becomes important when we consider how much food has changed.
A well-known 2004 study by Donald Davis, Melvin Epp, and Hugh Riordan compared USDA food composition data for 43 garden crops between 1950 and 1999. The researchers found apparent declines in several nutrients, including protein, calcium, phosphorus, iron, riboflavin, and vitamin C. The declines varied by nutrient, but were often summarized as ranging from about 6% for protein to 38% for riboflavin.
The study did not claim that vegetables are no longer healthy. They remain essential foods. But it raised an important point: when crops are bred for higher yield, faster growth, uniform size, appearance, and shipping durability, nutrient concentration may not always increase along with production. Larger and prettier food is not automatically more nourishing food.
Animal foods have also changed dramatically. In 1950, the average U.S. broiler chicken reached market in about 70 days and weighed just over 3 pounds. By 2025, according to National Chicken Council data, the average broiler reached market in about 47.5 days and weighed more than 6.6 pounds. In other words, modern chickens are much larger and grow much faster than chickens raised only a few generations ago.
Beef production shows a similar shift toward efficiency. USDA Economic Research Service data reported that since 1970, U.S. beef production increased even as the number of cattle used for beef production declined. One major reason was that average cattle weights increased by more than 30%, supported by breeding, feeding, and production changes.
These changes are not simply “good” or “bad.” They reflect a food system designed to produce more food with greater efficiency. But yangsheng asks whether efficiency alone is the right measure. A food system can produce large quantities of food while still weakening the relationship between soil, plant, animal, farmer, season, and eater.
This is also why many people now think about organic food. Organic does not mean perfect. It does not guarantee that a food is more nutritious in every case. A 2012 review published in the Annals of Internal Medicine found limited evidence that organic foods are significantly more nutritious overall than conventional foods, though organic foods may reduce exposure to pesticide residues and antibiotic-resistant bacteria.
A later 2014 meta-analysis in the British Journal of Nutrition came to a somewhat different conclusion. It found that organic crops, on average, had higher antioxidant concentrations, lower cadmium levels, and a lower incidence of pesticide residues than conventional crops. These findings do not prove that organic food automatically produces better health, but they do suggest that how food is grown can affect the qualities of the food.
This is where yangsheng offers a useful middle path. It does not require fear of modern food, and it does not require romanticizing the past. Instead, it encourages attention.
Is the food fresh? Is it close to its natural form? Is it appropriate for the season? Does it support digestion? Was it grown in a way that respects the soil? Is the animal food from a system that values only speed and size, or also health and quality? Is the meal eaten calmly, or rushed while distracted and tense?
In Chinese medicine, the Spleen and Stomach are central to the transformation of food into Qi and blood. This does not refer only to the chemical content of food. It also points to the body’s ability to receive, digest, transform, and use nourishment. Even excellent food can become a burden when eaten in excess, eaten too late, eaten under stress, or eaten without regard for constitution and season.
Modern food culture often separates food from life. Yangsheng puts them back together.
To nourish life is to remember that food begins before it reaches the plate. It begins in soil, water, seed, sunlight, weather, animal life, and human intention. When food is shaped only by speed, size, shelf life, and profit, something important may be lost, even if the shelves are full.
The goal is not perfection. Most people must make practical choices based on budget, access, and daily life. But small choices still matter: eating more whole foods, choosing seasonal produce when possible, supporting better farming when affordable, cooking simply, reducing heavily processed foods, and paying attention to how food actually makes the body feel.
Yangsheng reminds us that health is not only found in medicine after we become ill. It is cultivated in daily relationship. Food is one of the most direct relationships we have with the earth. When we choose and eat with awareness, we are not only feeding the body. We are participating in the larger pattern of life.
